Cranberry Pomegranate Relish

Cranberry Pomegranate Relish

Serves: 6-8
  • 1 pkg. fresh cranberries, rinsed and chopped
  • 1 apple, peeled and diced
  • ¼ c. dried cranberries, chopped
  • ¼ c. chopped pecans, chopped
  • ⅛ c. honey or maple syrup
  • 1 small can crushed pineapple in juice, drained
  • Arils of 1 pomegranate
  1. Rinse the cranberries and chop in a food processor. Transfer to a bowl and mix all the ingredients together. Store in the refrigerator. This relish will hold well for 4-5 days. This relish is delicious on it's own or on top of yogurt or pancakes. I even used it as an appetizer topping to crackers and cheese. Enjoy being creative with this relish.
