Cardamom Oat Cookies GF


One bite into these little oat cookies with plump raisins and cardamom will have you smiling from ear to ear. The soft texture and flavor of these cookies makes them the type of baked good that is enjoyable any time of day. Bake a double batch though they go fast!

Soft cardamom spiced oat cookies are the perfect little snack wether with your breakfast coffee or for that sweet tooth craving in the afternoon.

  • 1½ c. almond flour
  • ¼ c. coconut flour
  • 2 c. rolled oats
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ cardamom
  • 2 eggs
  • ¼ c. melted coconut oil
  • ¾ c. mashed banana
  • ¼ c. coconut palm nectar
  • ½ c. coconut palm sugar
  • 1 tsp vanilla extract
  • ¼ cup golden raisins
  1. Preheat the oven to 350.
  2. Mix the flours, oats, baking soda, salt, cinnamon and cardamom together and set aside.
  3. Now in a separate bowl mix the eggs, melted coconut oil, mashed banana, coconut palm nectar, coconut palm sugar, vanilla extract and raisins together. Once mixed well, slowly incorporate the dry ingredients in several batches. Mix just until blended well.
  4. Line 2 sheet pans with parchment paper and drop cookie batter into 1½" - 2" mounds onto the parchment paper. Allow enough space for the cookies to spread lightly. Bake the cookies for 12-15 minutes or until light golden and set in the center. Remove from the oven and lift off the parchment paper to the counter to allow the cookies to cool before placing them in an air tight container. The cookies will keep well in the fridge for up to 5 days.
